During the summer, I have gotten some time to breathe and relax. One of my favorite pastimes is baking so I tried to make some brownies in India with my mom. As I was making the batter, I forgot that I did not have chocolate. We went to the store to get chocolate and I had properly made the batter. Though I was tempted to eat the batter in between I had baked the brownies and they smelled great. As I put one in my mouth, I realized I wanted to post this recipe. So, this is one of my favorite brownies and I hope you guys make them.

Ingredients:

  • 8 oz of chocolate
  • 1¼ cups sugar
  • ¾ cup all-purpose flour
  • ¼ cup cocoa powder
  • 2 teaspoons salt
  • 4 teaspoons baking powder
  • ¾ cup melted butter
  • 4 tablespoons water
  • 2 teaspoon vegetable oil
  • 2 teaspoons vanilla extract

Recipe:

  1. Preheat the oven to 350 degrees Fahrenheit. Line an 8-inch square baking dish with parchment paper.
  2. Chop the chocolate into chunks. Melt half of the chocolate in the microwave for 20 seconds at a time by mixing, save the other half for later.
  3. In a large bowl, mix the butter and sugar until incorporated and then mix in the vegetable oil, water, baking powder, and vanilla for 1-2 minutes, until the mixture becomes fluffy and light in color.
  4. Whisk in the melted chocolate, then sift in the flour, cocoa powder, and salt. Fold to incorporate the dry ingredients, and do not overmix.
  5. Fold in the chocolate chunks, then transfer the batter to the prepared baking dish.
  6. Bake for 20-25 minutes, depending on how fudgy you like your brownies, then cool completely.
