Today is a big day of celebration but more so a huge day of gratitude and thanks to all of you who have contributed in so many ways in making me who I am. No words will describe my feeling on this day as I think of each and everyone of you as you are as much part of this journey of mine when 3 years ago on this day, I got this wonderful gift of launching AnujShah.com. So let us celebrate together with one my favorite cakes recipes which brings a little health, a little spice, lots of sweetness in our lives. This recipe was inspired by my cousin and I am so blessed to have you all always be there for me. Hope you all get a chance to bake this amazing carrot cake this holiday season and celebrate family together. 

Ingredients

  • 2 cups of all-purpose flour
  • 3/4 cup yogurt
  • 3/4 cup oil
  • 1 1/2 cup Sugar
  • 2 cup Shredded carrot
  • 2 tsp vanilla extract
  • 2 tsp baking powder
  • 2 tsp baking soda
  • 1/2 tsp salt
  • 1 1/2 tsp cinnamon powder
  • 1/2 tsp nutmeg powder
  • 1 cup any toppings (raisins or walnuts)
  • 3 packs of cream cheese
  • 1 1/2 cup sugar
  • lemon zest
  • 1/2 lemon squeeze

Instructions

  • In a large mixing bowl mix yogurt and sugar. Add oil, shredded carrots, and vanilla extract. Mix well.
  • In another bowl, mix together the dry ingredients: flour, baking powder, baking soda, salt, cinnamon, nutmeg.
  • Add flour and all the dry ingredients to the wet.
  • Bake it on 350 for 50 minutes.
  • Keep the cream cheese at room temperature.
  • Add lemon zest, lemon juice and sugar mix well.
  • Apply the frosting on the cake.
